Chenin Blanc is a variety capable of producing wines with varied personalities that depend on both where it is grown and the influence of the winemaker. Yes some winemakers choose to make a slightly sweet style but don’t be put off by this fact as the majority of Chenin Blanc is in fact made dry. Today this variety is being championed by numerous new producers that are making exciting expressions of the variety. Some like us are producing dry and delicate styles that are very pleasant when young but transform into something truly special with bottle age. A variety well worth exploring.

It is a fresh, vibrant, delicate style displaying quince, honey dew melon and pear with slight ginger and honeysuckle notes. The palate has an attractive chalkiness and noticeable minerally edge yet somehow manages to finish with a pleasantly soft, slightly creamy mouthfeel.
This wine is made from grapes grown on old vines in Yallingup Margaret River . The whole berries are gently pressed and the juice clarified prior to fermentation in 600lt egg shaped tanks. The tank shape allows for natural convection which keeps the yeast suspended in the wine. This seemingly small detail means that the wine can remain in contact with the yeast and provides a creaminess to the texture as well as a freshness not generally seen with other vessels.
