2024 Appassimento

Appassimento is a traditional Italian term for the technique of drying grapes before fermentation. It concentrates the sugars, acidity and flavour of the grapes which in turn allows the production of luscious sweet wines. Here we have applied this processing method to Verdelho and Semillon to produce a unique sweet wine style.
